Last week I was invited to the opening of Patisserie Chocolat. This new Parisian pastry school is located in the trendy SOCO area of Costa Mesa. Patisserie Chocolat boasts the finest ingredients with Both traditional and modern techniques straight from Paris.

When you walk in, you can see the results of their painstakingly meticulous artistry just looking in the glass case. There are colorful macaroons and chocolates so gorgeous, they could be framed!

Further in, there were fresh made fluffy and light cream puffs made to order with fine chocolates, caramels and fruit sauces.

Near the back, there was a sugar artist at work, both pouring into molds and pulling sugar to create a sculpture.

Then there was the chocolate enrober, which I wanted to stick my head under! Of course there were commercial sized ovens baking beautiful confections as well.

SOCO8

The pastry school teaches their students to make more than just sweets. Outside I was surprised by a wide array of pates, breads and gourmet macaroni and cheese.

SOCO6

Oh and just one more table of delicious sweets! This one was my favorite because seriously, how can you go wrong with Dark chocolate and peanut butter foam? It was even better than you think and yes, I went back for seconds!

If you are interested in learning to cook and bake authentic French foods, Patisserie Chocolat’s renowned Chef Stephane Treand is a fantastic source of knowledge! Check for classes starting soon!
