Rubio’s Introduces Wild Coho Salmon
As someone who eats out on a regular basis, and mostly at fast casual restaurants, I have to say Rubio’s has really stepped up their game in the past few years. They even added Coastal Grill making it even more appealing in my opinion.
Rubio’s® also added sustainable Wild Alaska Coho Salmon to it’s menu (it replaced atlantic salmon) as part of its ongoing “Made With a Mission”℠ commitment. You can order it grilled or house blackened and to celebrate , Rubio’s is bringing back its popular Chimichurri Salmon Two Taco Plate and Burrito, which will be available for a limited time beginning June 1.
The Chimichurri Salmon Two Taco Plate features grilled salmon placed atop warm stone-ground corn tortillas topped with chimichurri sauce, fire-roasted corn, creamy white sauce, Fresno Chiles and spring mix, and is served with no-fried™ pinto beans and sea salted tortilla chips.
The Chimichurri Salmon Burrito wraps Wild Alaska Coho Salmon melted cheese, chimichurri sauce, fire-roasted corn, Mexican rice, black beans, salsa fresca, Fresno chiles and creamy white sauce in a warm flour tortilla.
On a recent visit to Rubio’s I ordered a California Bowl with coho salmon and it was so fresh and delicious. The salmon was tender and flakey and paired perfectly with the rice and beans.
My husband enjoyed a Chipotle Ranch Salad made with handmade guacamole, salsa fresca, a cilantro/onion mix, tortilla strips, and butter spring lettuce mix You can order it with your choice of pan-seared shrimp, Regal Springs® tilapia (grilled or house blackened), Wild Pacific mahi mahi (grilled or house blackened), Wild Alaska Coho salmon or grilled all natural chicken raised without antibiotics.
