Corner Bakery Cooking Demo

When I arrived there was a demonstration area that was filled with all sorts of ingredients to make all kinds of yummy things. The produce looked amazing and the baked goods looked so good I wanted to eat them right then! But of course I didn’t. I didn’t want to look like the crazy lady!

Corner Bakery Ric

Ric Scicchitano is the Senior Vice President of Food and Beverage and also our celebrity chef! As he was cooking he explained everything in great detail and was very passionate about the food. You can tell this guys lives, breathes….and eats Corner Bakery!

CORNER BAKERY CAFE SUMMER MENU

Corner Bakery Pancakes

First up was their famous buttermilk pancakes with a twist. For the summer they have added fresh berries to go on top of an already fantastic stack of pancakes. The batter is always made the night before with real buttermilk so the batter can get to just the right consistency to make the fluffiest pancake! You can get this dish with bacon or with bacon and eggs. This also comes as a kids meal.

Corner Bakery Swiss Oatmeal

Next up was their Chilled Berry Almond Swiss Oatmeal. Another name for Swiss Oatmeal is Muesli. It’s also eaten cold. I have never had Swiss Oatmeal and I was skeptical because cold oatmeal just doesn’t sound appealing. I took a bite and OMG!!! It was one of the most fantastic things I have eaten for breakfast! This is chock full of berries, rolled oats, almonds, yogurt, milk, green apples, currants, dried cranberries and banana’s. So yummy and healthy! Oh and speaking of Currants…have you ever had their Black Currant Iced Tea? To die for I tell ya!!

Corener Bakery Pork Sandwich

The third and final item Ric cooked for us is the Spicy Asian Pork Hot Toasted Sandwich. This sandwich features shredded roasted pork sautéed in a spicy Asian barbecue sauce and fresh produce, including made-in-house pickled jalapeños, cucumbers, spicy slaw and cilantro, on a toasted French roll.   As I bit into the sandwich I was expecting it to be super spicy but it was too bad. It was the perfect combination of spicy and fresh and cool veggies so there was very little mouth burn. This is something I would normally not order but because of this tasting I would definitely order this the next time I’m in!

Corner Bakery Whoopie Pie

For dessert there were several items to choose from. I decided on the Lemon Cream Whoopie Pie. Corner Bakery Cafe is known for its baked goods and this one met my expectations and then some! It was moist, chewy and flavorful. The lemon flavor made it very refreshing. A perfect end to a great demonstration!

Erin Potter

I’m Erin! A tap dancing, ghost hunting, Disneyland going, happily married mom of 2. And you know what else? I LOVE TO EAT! I eat when I am stressed, I eat when I am happy, I eat when I am sad, I eat when I am waiting for dinner to cook…..you get the picture. Food has always been a huge comfort to me and being able to share my food experiences with others is what I enjoy most. I love going to restaurants because I get to try new foods and it means I don’t have to do the dishes. I also am a big fan of cooking. The rule in our house is I cook and hubby cleans…so it’s a win-win for me!
