It wasn’t until a year ago that I tried Gazpacho for the first time and I instantly fell in love. Gazpacho is so simple and easy to make and it is a refreshing on a hot day. For those that also love Gazpacho, Fig & Olive in Newport Beach had a delicious Andalucía gazpacho recipe I would like to share with you:
Fig & Olive’s Andalucia Gazpacho
Yields 4 servings
¼ lb Red Bell Pepper
2 tsp Cumin
2 TBSP Sherry Vinegar
¼ cup bread (French baguette or bread of choice)
1 Hot House Cucumber
1 TBSP Salt
1 tsp Tabasco
2 cups water
½ cup Spanish Onion
1/3 cup olive oil
Peeled cucumber, remove seed from bell pepper, and blend all the ingredients together in a food processor. Season to taste. Chill and serve cold.
