New Restaurant Coming To The Huntington Beach Hyatt

Last week EatDrinkOC attened a farewell media event of the restaurant ” The Californian” at the Huntington Beach Hyatt. The restaurant is briefly closing in preparation for a dramatic winter redesign and reconcepting.  The new restaurant will be emerging in early spring with a cutting edge culinary point of view, electric bar scene and stunning new look.

The concept is straight from the brain of Director of Food and Beverage Jon Benson and Executive Chef Manfred Lassahn. The new restaurant shatters the mold for standard resort dining with a myriad of options to enjoy the new menu of comfort food with attitude. Breakfast will offer:

  • grab and go baked goods, including Chef Lassahn’s Avacana Bread in a jar (made with avocado and banana),
  •  dine-in housemade granolas,
  • fresh pressed juices
  • savory egg dishes and more.

The lunch menu will be split into three categories: Bites, Greens and Liquids.

Dinner can start at the bar, where “bar jars” filled with pates and pickled delicacies can be enjoyed
immediately alongside handcrafted drinks, and Sunday night will offer a California twist on the southern
family-style favorite of “Meat + Three.”

The restaurant setting is being completely redesigned and will loosely reflect the resort’s Andalusian
architecture, with contemporary influences. One-of-a-kind furniture pieces, hand painted and glazed tiles and warm leather, private seating areas, communal tables, intimate alcoves and a cozy firepit provide a variety of experiences within the expansive space. Multiple kitchen areas in the restaurant act as live exhibition cooking spaces that will be utilized in different ways throughout the day. The restaurant is slated to reopen in March with a new name, which is yet to be revealed.

While we were there we tried a variety of new bites that will resemble the new menu.
